Soup Base

  • 1 lb ground chicken

  • 1 small purple (red) onion, diced

  • 3–4 cloves garlic, minced

  • 2 cups green cabbage, chopped (fresh)

  • 1½–2 cups frozen mixed vegetables (carrots, green beans, peas, corn—whatever you had on hand)

  • 1 cup cooked lentils (or 1 can, drained and rinsed)

  • 1 can (14–15 oz) stewed tomatoes, lightly crushed

  • 4–5 cups chicken broth (or water + chicken broth powder to taste)

Seasoning & Warmth

  • 1½ tsp paprika

  • 1 tsp dried thyme

  • ½–1 tsp black pepper

  • Salt to taste

  • Optional: pinch of red pepper flakes (very optional)

To Finish (Do Not Skip)

  • 1–2 tbsp apple cider vinegar (added at the very end)


🍲 Instructions

  1. In a large pot over medium heat, add the ground chicken and cook until mostly browned, breaking it up as it cooks.

  2. Add the diced purple onion and sauté until softened, about 3–4 minutes.

  3. Stir in the garlic, paprika, thyme, black pepper, and salt. Cook for 30–60 seconds until fragrant.

  4. Add the chopped fresh cabbage and frozen vegetables. Stir well to combine.

  5. Pour in the stewed tomatoes and chicken broth (or water + broth powder), making sure everything is well covered.

  6. Bring to a gentle boil, then reduce heat and simmer uncovered for 25–30 minutes, allowing the flavors to meld and the cabbage to soften.

  7. Stir in the lentils and simmer an additional 5–10 minutes.

  8. Turn off the heat and finish with apple cider vinegar. Taste and adjust salt or acidity if needed.

  9. Let sit for 5 minutes before serving to allow the broth to settle and deepen.
