A deeply nourishing, slow-simmered soup made with Italian sausage, lentils, purple sweet potato, and garden vegetables to warm the body and restore from the inside out.
🫙 Ingredients
• 1 lb Italian sausage
• 1 tbsp lard (the only fat used)
• 1 medium onion, diced
• 3 cloves garlic, minced
• 2 carrots, chopped
• 2 celery stalks, sliced
• 1 cup dry lentils, rinsed
• 1 medium purple sweet potato, peeled and cubed
• 5–6 cups chicken broth or bone broth
• 1 tsp sea salt (adjust to taste)
• ½ tsp black pepper
• 1 tsp Italian seasoning
• ½ tsp smoked paprika
• Optional: pinch of red pepper flakes
🍲 Method

In a heavy pot or Dutch oven, melt the lard over medium heat.

Add the Italian sausage and brown, breaking it into crumbles as it cooks.

Add the onion, carrots, and celery. Sauté 5–7 minutes until softened.

Stir in the garlic and cook about 30 seconds until fragrant.

Add the lentils and broth.

Season with sea salt, black pepper, Italian seasoning, and smoked paprika.

Bring to a gentle boil, then reduce heat and simmer for about 15 minutes.

Add the cubed purple sweet potato and continue simmering another 15–20 minutes, until lentils are tender.

Taste and adjust seasoning.
