Ingredients

  • 2 turkey breast, cubed

  • 1 cup cooked beans (black, red, pinto, or chickpeas)

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 cups shredded cabbage

  • 2–3 green onions (whites and greens separated)

  • 2–3 cloves garlic (optional)

  • 1 to 1½ tsp minced fresh ginger

  • 1 tsp turmeric

  • ½ tsp black pepper

  • Salt to taste

  • 1 bay leaf (optional)

  • Water or broth (enough to cover)

  • Lemon juice or apple cider vinegar to finish

Instructions

  1. Slice the green onions, keeping the whites and greens separate.

  2. In a pot, sauté the white parts of the green onions (and garlic, if using) with the minced ginger until fragrant.

  3. Add the cubed turkey and let it lightly brown.

  4. Stir in turmeric, black pepper, and salt.

  5. Add carrots, celery, and cabbage.

  6. Pour in enough water or broth to cover everything. Add the bay leaf.

  7. Simmer for 20–25 minutes, until the turkey is tender and the vegetables are soft.

  8. Stir in the beans and simmer 5 more minutes.

  9. Turn off heat and finish with a squeeze of lemon or a splash of apple cider vinegar.

  10. Top each bowl with the green parts of the onions.
