Grandma's Chili

A cozy, kid-approved family chili that’s hearty, nourishing, and made to keep everyone full and satisfied while still eating well. Comfort food you can feel good about serving.

Serves 6–8

Ingredients

  • 1 lb ground beef or ground turkey

  • 2-3 cans Original Rotel (10 oz each)

  • 2 cans pinto beans, drained and rinsed

  • 3–4 tbsp chili powder (this is the star—don’t be shy)

  • 1½ tsp ground cumin

  • 2–3 cloves garlic, minced (or 1½ tsp jarred)

  • ½ tsp New Orleans Cajun seasoning (just a touch for warmth)

  • ½ cup water (as needed for consistency)

  • Salt to taste (start with ½ tsp and adjust)

Optional (for kid-friendly smoothness):

  • Pulse the Rotel in a food processor before adding so there are no tomato chunks.


How to Make It

  1. In a large pot, brown the ground meat over medium heat until fully cooked.

  2. Add the minced garlic and let it cook for about 30 seconds.

  3. Stir in the Rotel (processed if you prefer it smooth).

  4. Add the pinto beans.

  5. Sprinkle in:

    • 3–4 tbsp chili powder

    • 1½ tsp cumin

    • ½ tsp Cajun seasoning

    • ½ tsp salt

  6. Stir everything together and add ½ cup water.

  7. Simmer uncovered for 20–30 minutes, stirring occasionally.

  8. Taste and adjust:

    • More chili powder if it needs depth

    • A pinch more Cumin if it feels flat

    • A splash more water if it gets too thick
