Ginger Garlic Chicken

1 tbsp lard

1 tbsp minced garlic

1 tbsp minced ginger

1 tsp paprika

½ tsp garlic powder

Salt + cracked black pepper

2 tbsp coconut aminos
-
1 tbsp maple syrup
-
1 tsp sesame oil (optional)
Rice Noodles
-
4 oz rice noodles
-
Water for boiling
Vegetable Stir Fry
-
1–2 cups mixed vegetables
(broccoli, carrots, peppers, onions, cauliflower or stir fry mix) -
1 tsp lard

Salt + pepper
🔥 Instructions
1. Cook the Noodles
Cook rice noodles according to package directions.
Drain and set aside.
2. Season & Cook the Chicken
Season chicken with:
• paprika
• garlic powder
• salt
• pepper
Heat 1 tbsp lard in a skillet over medium-high heat.
Cook chicken 4–5 minutes per side until golden and cooked through.
Remove from pan and set aside.
3. Build the Ginger Garlic Base
In the same skillet add:
• minced garlic
• minced ginger
Sauté 30 seconds until fragrant.
4. Cook the Vegetables
Add vegetables and sauté 4–5 minutes until tender but still vibrant.
Season lightly with salt and pepper.
5. Create the Sauce
Add to the pan:
• coconut aminos
• maple syrup
• sesame oil (optional)
Stir and allow the sauce to simmer 1–2 minutes.
6. Combine the Bowl
Add the cooked rice noodles to the skillet and toss so they absorb the sauce.
Slice the chicken and place on top of the noodles and vegetables.
