Greens Base

  • Butter lettuce (also called Bibb or Boston lettuce — soft, sweet, and light green)

  • Spring mix (adds the purple tones and depth)

  • Carrots, thinly sliced

  • Red onion 

  • Cucumber, sliced

  • Cherry tomatoes

  • Mandarin orange segments

  • Kalamata olives (optional)

  • Pickled Beets (optional)
  • Crunchy tortilla strips or crushed tortilla chips


πŸ— Citrus Herb Skillet Chicken

Ingredients

  • 2 boneless chicken breasts

  • Zest of 1 orange 

  • 1 tbsp fresh orange juice

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • Pinch of sea salt

  • Pinch of black pepper

  • 1 tsp butter or tallow

Instructions

  1. Pat chicken dry.

  2. In a small bowl, mix orange zest, orange juice, garlic powder, paprika, salt, and pepper.

  3. Rub mixture into both sides of the chicken.

  4. Heat a skillet over medium heat and add butter or tallow.

  5. Cook chicken 4–5 minutes per side until golden and cooked through.

  6. Let rest 3 minutes, then slice.

Ingredients

  • 2 tbsp mandarin orange juice (from the can or fresh)

  • 1–2 tbsp warm water to thin

Instructions
