🍗 Ginger Garlic Honey Lime Chicken Skewers with Cilantro Lime Rice & Garlicky Swiss Chard

🥕 Ingredients

Chicken Skewers + Marinade

  • 1½–2 lbs chicken breast or thighs, cut into strips or chunks

  • 3 cloves garlic, minced

  • 2 tbsp raw honey

  • Juice of 1 fresh lime (plus zest optional)

  • 1 tbsp melted lard

  • 1 tbsp coconut aminos or soy sauce

  • ½ tsp black pepper

  • ½ tsp Himalayan salt

  • Optional: pinch paprika or chili flakes for warmth


Cilantro Lime Rice

  • 1 cup jasmine rice, rinsed

  • 2 cups chicken stock (instead of water)

  • Juice of ½–1 lime

  • Fresh cilantro, chopped

  • Pinch Himalayan salt


Garlicky Swiss Chard Greens

  • 1 bunch Swiss chard, chopped (stems included)

  • 2 cloves garlic, minced

  • Himalayan salt & black pepper, to taste

  • Splash apple cider vinegar (ACV)

  • Small spoon of lard for sautéing


🔥 Instructions

1. Marinate the Chicken

Whisk together:

  • Garlic

  • Honey

  • Lime juice

  • Melted lard

  • Coconut aminos/soy sauce

  • Salt, pepper, optional spices

Coat chicken thoroughly and marinate:

  • Minimum: 30 minutes

  • Ideal: 2–4 hours for deeper flavor

Thread onto skewers.


2. Air Fry the Skewers (Primary Method)

Preheat air fryer to 380°F.

Cook skewers 20 minutes total:

  • 10 minutes first side

  • Flip

  • 10 minutes second side

Chicken should reach 165°F internal temp with caramelized edges.


Oven Alternative (No Air Fryer)

Preheat oven to 400°F (205°C).

Place skewers on a parchment-lined sheet or rack.

Bake:

  • 12–15 minutes

  • Flip

  • Bake another 10–12 minutes

Optional: Broil 2–3 minutes at the end for browning.


3. Make the Cilantro Lime Rice

Bring chicken stock to a boil.
Add rinsed jasmine rice and pinch Himalayan salt.

Simmer covered ~15 minutes until tender.
Remove from heat, fluff, then stir in:

  • Lime juice

Adjust seasoning if needed.


4. Sauté the Swiss Chard

Heat pan with a small spoon of lard.
Add garlic first until fragrant.

Add chard stems, then leaves.
